Sweet Potato, Bacon, Brussels Sprout Hash
This Sweet Potato, Bacon, Brussels Sprout Hash has the perfect kick of sweetness, thanks to a Granny Smith apple and a little brown sugar. It’s gluten-free and dairy-free, too! Whip it up to add some veggies to any meal. Please note: All the ingredients below are easy to find gluten- and dairy-free, but not all brands are safe. So be sure to always check the ingredients.

  1. Cut the bacon into bite-sized pieces. We used strips about 1/2 an inch wide.
  2. Peel the potato and cut it into 1/2 inch cubes.
  3. Cut the tips off the Brussels sprouts, then cut them into quarters.
  4. Cook the bacon over medium heat until desired crispness. Remove bacon with a slotted spatula or spoon and set aside on a paper towel covered plate. Leave grease in the pan.
  5. Add the sweet potatoes and continue to cook over medium heat for 5 minutes. Stir after a couple minutes.
  6. Add the Brussels sprouts and cook for 15 minutes, stirring every few minutes. Cover with a lid when not stirring.
  7. Chop the apple into bite-sized pieces.
  8. Turn heat to low and add brown sugar, cinnamon, apples, and the bacon you set aside. Stir until well blended and serve warm.
