This dish has the perfect kick of sweetness, thanks to a Granny Smith apple and a little brown sugar. We also started out with bacon so everything else could cook in its grease. Because, well, bacon! We love bacon. It gives everything an extra kick of flavor.

We never thought we could love Brussels sprouts, but my gosh, we couldn’t stop taking just one more bite. Whip this up as a side to any meal, or make it a meal on its own!

Sweet Potato, Bacon, Brussels Sprout Hash

Sweet Potato, Bacon, Brussels Sprout Hash
Instructions
  1. Cut the bacon into bite-sized pieces. We used strips about 1/2 an inch wide.
  2. Peel the potato and cut it into 1/2 inch cubes.
  3. Cut the tips off the Brussels sprouts, then cut them into quarters.
  4. Cook the bacon over medium heat until desired crispness. Remove bacon with a slotted spatula or spoon and set aside on a paper towel covered plate. Leave grease in the pan.
  5. Add the sweet potatoes and continue to cook over medium heat for 5 minutes. Stir after a couple minutes.
  6. Add the Brussels sprouts and cook for 15 minutes, stirring every few minutes. Cover with a lid when not stirring.
  7. Chop the apple into bite-sized pieces.
  8. Turn heat to low and add brown sugar, cinnamon, apples, and the bacon you set aside. Stir until well blended and serve warm.
