We first made these at Tyler’s Dad’s family Christmas gathering. We wanted to bring something that was quick and easy to make and was likely to be adored by all. Tater tots were an easy candidate for easy-to-make, and it’s hard not to like something wrapped in bacon!

The brown sugar adds a nice, crispy sweetness and then a dab of siracha wraps a spicy bow on this miniature bite of heaven. We also made these as a Super Bowl snack. This is definitely a tailgate staple for us now, and we’ll be bringing it to watch games for years to come!

Pro Tips:

  • Measure carefully before cutting the strips of bacon. You don’t want them too short to wrap completely around the tater tot!
  • Don’t use extra thick bacon if you want the bacon to get crispy.
  • Set the tater tots out to begin defrosting before you start the prep work. It will make it easier to stick the toothpicks in!

Instructions
  1. Heat oven to 400 degrees Fahrenheit. Prepare a baking sheet with oil, or use foil for easy clean-up.
  2. Cut the strips of bacon into thirds. It should be long enough to wrap around a tater tot with about a quarter inch of overlap (at a minimum).
  3. Pour the brown sugar into a bowl or plate.
  4. Wrap each piece of bacon around a tater tot, with your preferred amount of Sriracha. We put a thin line of Sriracha in the middle of each piece of bacon before we wrapped it for a nice little kick.
  5. Roll the covered tater tot in the brown sugar, then stick a toothpick through the bacon and into the tater tot, where the bacon overlaps. Place on the baking sheet.
  6. Once all the tater tots are prepared, cook for 20 to 30 minutes, until the bacon is starting to crisp. The cooking time will depend on the thickness of the bacon you use.
