This vegetarian dish is super simple to make. To make preparation as easy as possible, we made the quinoa with a rice cooker. Lauren has used it to make rice for years, and now we know it makes great quinoa, too! Rice cookers are great because they usually have markings letting you know exactly how much water to add. Then you just set it to cook and it will switch off when the quinoa is fluffy and ready to go!

In our opinion, kale is like spinach’s younger, more popular cousin. Just looking at them it’s obvious that they’re both from the healthy land of green, leafy things. But nowadays, kale keeps stealing the spotlight (and space at everyone’s dinner tables) that once belonged to spinach. We love them both.

In fact, Tyler sometimes eats an entire bag of spinach in one sitting. It’s… a lot of spinach. Good thing it’s so healthy!

We chose kale for this Super Quick Broccoli, Kale, and Quinoa Curry because it’s more bitter taste is a great fit for the curry flavors. And it will maintain just enough crunch to complement the broccoli. Yum!

If you’re not a big coconut fan, don’t let the coconut milk concern you. Lauren doesn’t like coconut flavor and still loves this recipe! Once it’s all cooked up, there’s not really a coconut flavor that sticks out.

If you have a quick way to prepare quinoa, you can make this meal in a jiffy. Without much muss or fuss you’ll have a tasty, wholesome dinner ready for your family to enjoy in no time!

Pro Tip

Try to cut your kale and broccoli into pieces as close in size as possible. That will make it easier to cook evenly. Also, make sure to use a large pot! The kale will take up a lot of space at first. But don’t worry, it will shrink down once it’s cooked!

Instructions
  1. Start preparing quinoa according to the directions. We like to use a rice cooker so we can start it and forget about it. If you have chicken broth on hand, you can make the quinoa with that instead of water to add more flavor.
  2. Cut kale leaves into pieces about an inch long.
  3. Chop broccoli into bite-sized pieces.
  4. In a dutch oven over medium heat, combine the extra virgin olive oil, garlic, and ginger. Stir continuously for 30 seconds.
  5. Add the kale, broccoli, and salt. Cook for 3 minutes, stirring occasionally.
  6. Add coconut milk, curry paste, and cumin. Stir until well-mixed.
  7. Reduce heat to simmer and cover pot for 5 minutes.
  8. Stir in pepper, then remove from heat.
  9. Serve warm with quinoa, and enjoy!
