Sautéed Vegetable Medley
This super scrumptious Sautéed Vegetable Medley is gluten-free, dairy-free, Whole 30 compliant, and full of flavor! Your body will thank you for all the nutrients that come jam packed into these veggies. Please note: All the ingredients below are easy to find gluten- and dairy-free, but not all brands are safe. So be sure to always check the ingredients.

  1. Rinse all vegetables. Cut tips off Brussels sprouts, then cut into quarters.
  2. Cut potato, onion, and broccoli into bite-sized pieces.
  3. Cut carrots into half inch coins.
  4. Pour 1 Tbsp. olive oil into a large skillet and heat over medium heat.
  5. Add garlic and sauté for one to two minutes, until fragrant. Stir frequently.
  6. Add potatoes and stir occasionally for 5 minutes, or until browned.
  7. Add 2 Tbsp. olive oil and the remaining vegetables. Stir in salt, pepper, and allspice.
  8. After 10 minutes, quarter a lime and squeeze the juice over the vegetables. Stir until mixed, then serve warm.
