Quick One-Pot Chili Stew
Our Quick One-Pot Chili Stew is full of flavor and can be ready to go within an hour! In addition to being gluten-free and dairy-free, this chili stew is Whole 30 compliant. It takes the savory, meaty goodness of chili and combines it with the hearty vegetables of a stew! Please note: All the ingredients below are easy to find gluten- and dairy-free, but not all brands are safe. So be sure to always check the ingredients.

Instructions
  1. Cut the sweet potato and vegetables into bite sized pieces. If you don’t like big chunks of onion, dice the onion so it blends in with the stew.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add sweet potatoes and 1 tsp. of salt. Cook for 5 minutes, stirring occasionally.
  4. Add the meat and cook until browned, stirring occasionally.
  5. Add all remaining ingredients and stir until well mixed. Once boiling, turn the heat down to simmer and cover.
  6. Let sit for 20 to 30 minutes. Serve warm, and enjoy!
