Instructions
  1. Heat skillet over medium heat. Add olive oil and potatoes.
  2. Spread potatoes out, then add salt. Let cook for 5 minutes.
  3. Scramble eggs in a bowl.
  4. Flip potatoes over and add pepper, garlic powder, and paprika. Let cook for another 5 minutes.
  5. Once potatoes are browned and cooked through, pour in the eggs and stir until eggs are cooked.
  6. If desired, add spinach. Serve warm and enjoy!
