This recipe has been a staple in Lauren’s culinary arsenal for a long time now. The pineapple adds a sweetness to the rice that mixes perfectly with the garlic, vegetables, and notes of ginger. And like most of our favorite dishes, bacon makes an appearance. It adds a savory flavor throughout and contributes a nice crunch whenever you encounter a morsel.

Instructions
  1. Cook rice in a rice cooker or on the stove, as directed on the box. (We like using a rice cooker because you can turn it on and forget about it while working on everything else!)
  2. Dice bell pepper and onion. Mince garlic. Drain pineapple.
  3. Heat oven to 375 degrees Fahrenheit. Arrange bacon on parchment paper on a cookie sheet and bake for 15 minutes.
  4. Heat a large skillet or dutch oven over medium heat.
  5. Add oil, garlic, and ginger. Stir, then let sit for one minute.
  6. Add onion and bell pepper. Salt to taste. Sautee for 5 minutes, stirring occasionally.
  7. Add pineapple and cook for another 3 to 4 minutes.
  8. Add rice, soy sauce, and bacon crumbles. Stir until well mixed.
  9. Take off heat and stir in sesame oil and lemon juice. Serve warm.
