Pineapple Burger Bites

The secret to these Pineapple Burger Bites is in the ground beef. We recommend the perfect blend of salt, pepper, garlic powder, and cumin that will bring all the right flavors out of the meat. We then outfit each miniature patty with a sweet potato base (makes holding them easier), add a slice of pineapple (to sweeten things up!), a leaf of spinach (to add some greenery and a healthy crunch), and a piece of bacon. Mmmmm mmm, that is one scrumptious combination. Going to a potluck somewhere? Stick a toothpick through the middle and they’re ready to travel!

And after you taste one… you won’t be able to help yourself from taking a second. We first made these to eat for dinner, and they worked perfectly. We had fun eating each Pineapple Burger Bite, and there were more than enough leftovers for the next day. If you decide to bring them somewhere to share, you may want to double the recipe, because these crowd pleasers will go fast!

Pro Tip

Make sure to bake the sweet potato rounds long enough to get cripsy. A crispy crunch from the spinach and sweet potato really go well with the juiciness of the burger and pineapple!

Instructions
  1. Heat oven to 425 degrees Fahrenheit.
  2. Slice the sweet potato into slices about 1/2 inch thick.
  3. Grease a baking sheet and arrange sweet potatoes into a single layer. Drizzle oil over slices or coat with cooking spray.
  4. Bake for 15 minutes, flip each potato, then bake for another 10 minutes, until both sides are browned.
  5. While the potatoes are baking, cook bacon slices in a skillet over medium heat.
  6. Mix cumin, garlic, salt, and pepper into the ground beef.
  7. Shape beef into patties slightly wider than the potato slices (they'll shrink as they cook).
  8. Once bacon reaches your desired level of crispiness, remove it from the skillet and dump the fat. Add the patties to the skillet over medium heat.
  9. After 2 to 3 minutes, flip the patties. Cook for another 4 to 5 minutes, or until the juices run clear.
  10. Cut pineapple and bacon slices into smaller pieces.
  11. Assemble burger bites in the following order (from bottom to top): sweet potato, spinach, beef, pineapple, bacon. Stick a toothpick in the middle to hold it all together!
