The Farmer’s Touch

One of the beautiful aspects of this recipe is its simplicity. We picked up some good looking asparagus stalks while we were at the farmer’s market. (Side note: We found out they were grown down the road in Kilgore, Texas, too. It’s always fun to chat with the family farmers you meet at those events and learn about how and where they grow all that tasty produce.) Since we started with such healthy asparagus, we just seasoned them and stuck them in the oven.

Lemon Garlic Asparagus… So Good, Yet So Easy

This Lemon Garlic Asparagus is a dish we’ve been making for a while now. Recently, we wanted something healthy to snack on while watching the baseball game. We started prepping right before the first pitch and we were digging in to enjoy by the second. Since they are in the oven for a majority of the cook time, we got to pay attention to the game and not miss a pitch. This recipe is perfect for anyone busy and on-the-go whose attention is required places other than the kitchen.

Pro Tip

The more space you leave between stalks, the crispier they will turn out. Once you find your preferred level of crunchiness (or lack thereof!) take note and try to use a similar stalk spacing the next time.

Instructions
  1. Heat oven to 425 degrees Fahrenheit.
  2. Trim the white and tough part of the asparagus stems.
  3. Cover a baking sheet in foil, then arrange the asparagus on the sheet, making sure none of the asparagus is overlapping.
  4. Generously drizzle olive oil over the asparagus. Then sprinkle salt, pepper, and garlic powder to taste. We like to make sure each piece has a good coating.
  5. Bake for 10 minutes, or until just tender.
  6. Squeeze the juice of half a lemon over the asparagus, then enjoy!
