Kielbasa Tater Tot Casserole

Lauren always has some sort of frozen potato on hand for a last-minute meal (such is the gluten-free life). And Tyler has a fondness for tater tots. After all, they’re a fun, simple finger food beloved by kids and adults alike. They make a great tailgate snack or side dish, but they also have the hidden potential to add some crunchy, potato-y texture to an entrée!
So we tossed some tater tots with flavorful, protein-filled kielbasa (polish sausage), chopped onions, and green peppers to make this delicious casserole. It will fill the kitchen with rich aromas that’ll make everyone’s stomach start to rumble.
