This recipe is a great idea for parents with kids who run in fear at the mere mention of eating vegetables for dinner. Five Ingredient Barbecue Hash Brown Casserole is full of green beans (one of our personal favorite veggies!), onions, peppers, and potatoes. But they are all disguised within a casserole of ham and bacon that tastes like barbecue sauce! Kids won’t realize that you’ve pulled a fast one on them, they’ll just be glad you made something that tastes so good!

When we came up with this recipe, we had a pretty hectic day in front of us that didn’t leave much time to make (or much less think about) dinner. That meant we’d have to make something with minimal prep work that could cook while we were busy doing other things — a textbook example of the perfect scenario for a slow cooker.

A slow cooker is great for cooking casseroles, or any dish where your goal is to merge several ingredients into one homogenous dish. The uniform heat distribution allows all the flavors to mingle and mix together. You can find slow cookers in a variety of sizes to best fit your needs. We use this 6 quart oval Crock Pot, a model of the original slow cooker.

Pro Tip

Regular, plain hash browns work just fine for this recipe. However, why use plain ole hash browns when potatoes o’brien have so much more to offer! POB (potatoes o’brien) are normal hash browns with onions and peppers already mixed in. You can find them right next to each other next time you’re in the frozen potatoes aisle of your local grocery store.
