Pro Tip

Frying the tortillas correctly is key for successful tostadas. Make sure to lightly coat both sides of the tortilla with oil and fry each side for equal amounts of time to ensure a crisp, even browning throughout!

Crispy Breakfast Tostadas
These gluten-free, dairy-free Crispy Breakfast Tostadas are really fun to make and bring a little Tex-Mex flair to the table! This crispy, crunchy treat won't take much prep work at all, which makes them perfect for any time of day. Please note: All the ingredients below are easy to find gluten- and dairy-free, but not all brands are safe. So be sure to always check the ingredients.

Instructions
  1. Heat a skillet over medium-high heat. Pour 1/2 Tbsp. of olive oil in the skillet, then add a tortilla. Heat for 2 minutes, add more oil, then flip the tortilla over. Heat for another 2 minutes, until crispy. Set on a cooling rack. If you have a big enough skillet (or a griddle), you can prep more than one tortilla at the same time. Just make sure to add enough oil!
  2. While working on the tortillas, put another skillet over medium heat. Add 1 Tbsp. olive oil, hash browns, salt, and pepper. Don't skimp on the salt and pepper! Give the potatoes a solid coating.
  3. Heat refried beans, per instructions on the can.
  4. Scramble eggs in a bowl. Once hash browns are browned and cooked through, add the eggs to the skillet. Scramble until all eggs are cooked.
  5. It's time to assemble the tostadas! Spread a layer of beans on each tortilla, then the egg/potato mixture. Top it off with some salsa and basil, or even avocado. Serve warm.
