Chicken Zoodles with Peanut Sauce
This gluten-free, dairy-free Chicken Zoodles with Peanut Sauce recipe tosses savory chunks of garlic sautéed chicken into a hearty peanut sauce and lays it all over a bed of spiralized zoodles. It’s easy to make and hearty enough to send everyone away from the table full and happy! Please note: All the ingredients below are easy to find gluten- and dairy-free, but not all brands are safe. Instructions
  1. Spiralize (or peel) the zucchini. Cut the chicken into 1/2 inch pieces.
  2. Heat a skillet over medium heat. Add the extra virgin olive oil, smashed garlic, salt, and chicken. Cover and cook for about 5 minutes, or until juices run clear. Stir occasionally.
  3. Remove chicken and set aside.
  4. Add spiralized zucchini and pepper to the skillet. Cook for about 5 minutes, stirring frequently. The longer the zucchini cooks, the brighter and less translucent it will become. Sample to see if they’re your preferred taste.
  5. In a small saucepan over medium heat, add sauce ingredients and chicken, Stir until heated and combined.
  6. Pour the chicken and sauce combo over the zoodles when serving. Enjoy!
