Pro Tip

Hard-boiled eggs are simple and easy, but it’s fun to use other forms of eggs, too. Try throwing two sunny side up eggs in your potato nest instead! Don’t be afraid to add some spinach or other favorite greenery into the nest – it’ll look even more authentic and add in more flavor and nutrients! Give them a try and let us know about your favorite variation in the comments below!

Instructions
  1. Rinse potatoes, then spiralize.
  2. Hard boil the eggs in an egg maker or in a pot over the stove. When they're done boiling, set them aside in an ice bath so they're easier to peel.
  3. Place a large skillet over medium heat. Once heated, add olive oil and potato spirals.
  4. Add salt and pepper, then turn the potatoes frequently for even browning.
  5. When potatoes are crisp and browned, form them into nest shapes on a plate.
  6. Peel the shells off the eggs and place them in their nests!
