  1. Heat a skillet over medium heat.
  2. Add olive oil, onions, peppers, and salt. Cook for 2 to 3 minutes, until vegetables are soft.
  3. Tear bacon into pieces and add to skillet. Add spinach.
  4. Scramble the eggs in a bowl, then pour into the skillet. Scramble the eggs as they cook.
  5. Season with pepper and top with avocado.
