Super Simple Spinach Rice

We were overdue for a trip to the grocery store and decided to try to make a lunch with things we had on hand, and this spinach rice was the result. Lauren was skeptical of this combination, but Tyler insisted, and it’s pretty great. The spinach adds some nutrients and spruces up a traditional side of rice.

Sprinkle pepper and sage to add some flavor, then top it off with your favorite meat or veggies! The best part is you can make a big bowl at once and save the leftovers to eat throughout the week.

Tyler’s recommendation: Add any ready-to-go meat you have on hand to make a full lunch out of this, like chicken strips or cubed ham. Tyler’s personal favorite is Spam. He swears by it, but it’s definitely not the combo for everyone!
