This gluten-free, dairy-free Smoky Bacon Chili recipe was initially concocted for a chili cook-off at the office. It was a major crowdpleaser and won the blue ribbon! We have made it plenty of times since then — dinner on a chilly day, tailgating, Super Bowl parties, anyplace chili would hit the spot, really.

Dallas really struggles with the whole concept of fall, so whenever there’s a hint of chill in the area, we take the opportunity to make some chili.

You could debate how authentic this chili is, since it includes beans. But you definitely can’t debate how amazing it tastes!

Smoky Bacon Chili
This smoky bacon chili has won a chili cook-off. The bacon makes it extremely hard to resist. And it's gluten- and dairy-free, too! Please note: All the ingredients below are easy to find gluten- and dairy-free, but not all brands are safe. So be sure to always check the ingredients.

Instructions
  1. Fry bacon in a skillet on medium-high heat, until 80% cooked. Remove from pan.
  2. Cook ground beef in bacon fat.
  3. Chop onion, and cut bacon strips into bite-sized pieces.
  4. Add all ingredients (except the bacon and beef fat) to a medium-sized saucepan. Stir until well-mixed. Cook for a few minutes on medium-high heat, then turn to low.
  5. Let chili simmer for 30 minutes, stirring occasionally. Serve hot.
