Quick One-Pot Chili Stew
Our Quick One-Pot Chili Stew is full of flavor and can be ready to go within an hour! In addition to being gluten-free and dairy-free, this chili stew is Whole 30 compliant. It combines the savory, meaty goodness of chili with the hearty vegetables of a stew!
We invented this recipe more out of necessity than anything. At 5:30 Friday night, we accepted an impromptu invitation for dinner and games at 7:30. Our hosts were finishing up running errands for the day, so we happily volunteered to bring something for dinner. We only had two hours to make something and get over to their house, so we grabbed our coats and walked to the grocery store. Along the way we started debating the quickest, simplest, tastiest thing we could make.
Lauren was toward the end of her first week doing Whole 30, so our options were even more limited than normal. We quickly came to the conclusion that chili is fast and a crowd pleaser. Plus, it had been a very cold week. But just then our inventive sides shone through! We decided to add in some vegetables to introduce some color and really fill up everyone’s stomachs.

Pro Tip: A great way to lower your grocery bills is to buy the meats that are on sale. Chili meat was a great price when we were shopping, but you can also make this chili stew with ground beef, ground turkey, etc.
