Lite Turkey Chili

We’ve finally gotten some cooler weather here in Dallas, and it’s making us crave chili. This lite turkey chili is quite different than Tyler’s smoky bacon chili, since Lauren is a big believer that beans don’t belong in chili. But both are delicious in their own way!

Lite Turkey Chili

We used ground turkey in this chili to make it healthier, and it’s packed with tomatoes and veggies. All the flavors meld together when it’s simmering on the stove for a blend of sweet and spice. As you can see, our favorite way to eat it is with some Fritos for an extra crunch. We also love that there’s minimal prep, and we can make it all in one pot!

Lauren loves to make this is in the summer to eat for a warm lunch in the chilly, air-conditioned office. Yes, even when it’s 100 degrees out! But there’s just something about fall that makes chili extra tasty.

Lite Turkey Chili
Warm up in the cool weather with this gluten-free, dairy-free lite turkey chili! Ground turkey and lots of veggies make for a healthy, hearty meal. Lite Turkey Chili
Instructions
  1. Dice the onion and green bell pepper.
  2. In a large saucepan, cook onion, bell pepper, and ground turkey over medium-high heat. Break apart the meat as it cooks, until browned.
  3. Add the juice of one lime, Rotel, diced tomatoes, tomato sauce, minced garlic, chili powder, cumin, brown sugar, salt, and pepper. Stir well.
  4. Reduce heat to a simmer and cover. Leave for 30 minutes.
  5. Serve warm with Fritos, or any of your other favorite chili toppings.
