Chicken Zoodles with Peanut Sauce

The chicken is great and the zoodles are tasty (and healthy!), but the peanut sauce is what really steals the show. We found just the right ratio of peanut butter, soy sauce, siracha, and lime juice to really kick this meal up a notch. You can prepare the entire meal in one pot and in no more than 30 minutes from start to finish!
Tyler got this spiralizer this past Christmas, so we’ve been spiralizing everything we can get our hands on! We used the spaghetti noodle setting for the spiralized zucchini in this Chicken Zoodles with Peanut Sauce recipe. Before we had a spiralizer, we tried to make this recipe with a vegetable peeler. We were able to get the zucchini in long, linguini-esque strips, but it never seemed perfect. Don’t get us wrong — the peeler got the job done and the noodles tasted just fine, so feel free to use one in a pinch. But Tyler cut himself in the process and the zoodles just weren’t as picture perfect as we were hoping for. The spiralizer made the process so much easier — and pain-free!
